Truffles from our forests are quarried at the crack of dawn, to be brought as soon as possible to our laboratory, where they aremanually selected for size and aroma; only the truffles that pass this careful selection within two days reach the kitchens of the best restaurants around the world, the others become preserves, or fertilizer for our truffle farms.
