The prized fresh white truffle has an unmistakable aroma that is suave yet distinct. It is the most coveted truffle by both chefs and amateurs around the world.
The gleba (inner flesh) of the fresh fine white truffle is characterized by a color ranging from powdery pink to deep pink, almost brown, with very fine veins.
The peridium (outer peel) is smooth, light yellow to ochre in color depending on the place of collection.
In fact, it is the diversity of environments that gives different characteristics and scents that makes each truffle unique.
It is recommended to wash the Truffle only when 'necessary. Using a soft bristle brush, wash it under a trickle of cold water. Dry it well with paper towels before use.
It is preferable to consume White Truffle raw so as not to lose its refined aroma.
Therefore you should use a truffle slic er to cut it into very thin slices to embellish your dishes.

The Prized White Truffle (tuber magnatum Pico) is harvested FROM SEPTEMBER 15 to JANUARY 31.
The ideal habitat where it thrives is rich vegetation, moist with little insolation, in valley bottoms, along streams and in forests where proper moisture is maintained.
It is found at elevations ranging from 100 to 500/600 meters above sea level. The tree species with which it best lives in symbiosis are Oaks, Willows, Hornbeams, Lime trees and Poplars.The search for this very rare fungus is among the most difficult, as it is the only Truffle that can be found even one meter deep. This even more makes us understand its rarity and difficulty in 'spotting it.
White Truffle in cooking does not tolerate high temperatures in fact it is recommended to use it only raw.
To enhance its wonderful aromas, one always tries to tie it to a fatty seasoning, which in this case is butter.
Recommended on 'fried egg, on pasta dishes or risottos, ideal on cheese fondue.
