Ingredients for 4 people

FOR THE RAVIOLI PASTA:

300g Flour

3 Eggs

Salt

FOR THE FILLING:

350g Ricotta Cheese

1 Egg

60g Parmesan cheese

Nutmeg

Salt

Pepper

TO SEASON:

80g Butter

1 White Truffle

DIRECTIONS:

Make the dough: mix the flour with the eggs and a pinch of salt, knead it and let it rest for half an hour.

Prepare the filling: mix the sieved ricotta cheese with grated Parmesan, eggs, two pinches of

nutmeg, one of salt and one of pepper. Roll out the dough into a thin sheet. On half part of it, put in a raw the filling made in small several piles, then fold the other half part of the sheet and press your fingers around the filling; cut the ravioli and press very well their edges.

Boil them, season in a bain-marie way with melted butter and slices of white truffle.
