Cream cheese and truffle candies
Cream cheese and truffle candies are a delicious Italian-inspired dish that combines rich and refined flavors. This recipe calls for making fresh pasta in the shape of candies, but the filling is also suitable for other types of pasta such as tortellini or ravioli. The cream cheese combined with truffles creates an exceptional flavor that will delight your palate and that of your guests.
Ingredients
- 100 g black truffle
- 250 g of flour
- 2 eggs
- 100 g of stracchino cheese
- 100 g of petit suisse
- 200 g of cottage cheese
- 80 g of grated cheese
- 60 g of butter

Instructions
Mix the flour with the eggs, knead for a few minutes, make a ball and let it rest for half an hour. Pass the ricotta through a sieve and mix it with the other cheeses, season with salt and pepper, add a pinch of nutmeg and freshly grated black truffle. Mix well and keep aside in the refrigerator.
Roll out the puff pastry and cut out squares about two inches on a side. Brush their surface with very little melted butter, place a teaspoon of cream cheese on top, and close the pastry into a candy shape by turning the two ends in the opposite direction.
Boil the caramels in plenty of salted water, dress them on a serving plate with the butter first worked into a cream and thin slices of truffle.
