White Truffle Tagliolini
White truffle noodles are among the easiest and quickest pasta dishes to enhance the prized truffle. With a true chef's result.
Ingredients
- 400 gr Fresh Tagliolini
- 60 gr White Truffle
- 80 g butter
- 100 gr parmesan cheese
- salt to taste.
Instructions
Thoroughly clean the White Truffle using a soft bristle brush, dry it in paper towels and place it in the refrigerator to keep its aroma at its best.
Meanwhile, while the water comes to a boil, in a fairly large skillet melt the butter, without sautéing it.As soon as the butter is melted, turn off the flame and grate about 20 grams of white truffle and salt to taste.
Drain the noodles while still al dente and pour them into the pan with the prepared mixture.
Add a generous sprinkling of grated Parmesan cheese, add two ladles of pasta cooking water, and mix well.
Prepare the portions, slice the remaining White Truffle on top of the noodles, in very thin slices, and serve immediately piping hot.
