- 500 g rump or beef tenderloin
- 40 g of 100% sliced summer truffle sauce
- 1 clove of garlic, minced
- Black truffle extra virgin olive oil to taste.
- green pepper to taste.

Instructions
Begin by beating the meat vigorously, and then chopping it very finely with quick knife movements. Blend the garlic so that the mince is as fine as possible, add the ' black truffle extra virgin olive oil, juice of ½ lemon, green pepper and pounded quite coarsely.
Next, with the help of a mold, place the 4 portions on the serving plates.
On each tartare, add a drizzle ofextra virgin black truffle oil and a spoonful of 100% sliced summer truffle sauce again.
Alternatively, you can grate or finely slice fresh black truffles.
