500g Fresh Tagliatelle
80 gr White Truffle
80 g Butter
Parmesan cheese q.b.
Salt to taste.

Instructions

Put 5 liters of water in a large pot, add coarse salt ( 5-6 teaspoons equal to approx. 50-60 g), it is preferable to salt the water while it is still cold.
Clean the truffle under running water to remove soil residue: we recommend using a soft bristle brush; when finished, dry the truffle in paper towels.
Melt the butter in a wok pan, turn off the heat and as soon as it has melted add about 5 grams per person of grated truffle and salt to taste.
As soon as the water boils throw in the noodles. Drain the noodles when al dente and pour them into the wok.
Add a generous sprinkling of Parmesan cheese. Let the noodles season for a few minutes, stirring with a wooden spoon, and use a ladle or two of the cooking water to mix as best you can. As soon as the noodles have been seasoned with the sauce, serve them hot by serving them on a platter with the remaining very thinly sliced truffle, helping yourself with the truffle cutter.
