  1. DESCRIPTION OF FRESH SUMMER BLACK TRUFFLE 

    Fresh Summer Black Truffle (tuber aestivum Vitt.) is known vulgarly as Scorzone, being characterized by a very hard outer rind.

    In central Italy, it is definitely the best known truffle as the area is ideal for its creation.

    Its large production in the wild determines its so affordable price.

    It has a pleasant and delicate aroma.

    The gleba (inner flesh), always light in color, varies from light hazel to brown and is crisscrossed with numerous white veins.

    The peridium (outer rind) is blackish-brown in color, and is characterized by large, sharp pyramidal warts that are clearly evident.

  2. TRADITIONAL WAY OF USING SCORZONE

    It is recommended to wash the truffle only when 'necessary with the help of a medium/hard bristle brush under cold running water. Dry it well with paper towels before use.

    It is one of the truffles that best holds up to high temperatures although it is definitely recommended not to sauté or brown it.

    Use it to make a sauce that you will use to season croutons, eggs and whatnot.

    Grate the scorzone quite finely by adding Extra Virgin Olive Oil, garlic and salt to taste.

    To garnish your dish you can add a few slices of truffle using the truffle slicer.

    The Summer Black Truffle (tuber aestivum Vitt.) is harvested FROM THE LAST SUNDAY IN MAY TO AUGUST 31.

    The species prefers habitats at varying elevations, in calcium-rich soils, and grows in symbiosis with Oak, Hornbeam, Pine, Ash, Beech and Hazelnut trees.

  5. BLACK SUMMER TRUFFLE PRICE

    The cost of truffles varies each season; the selling price of truffles depends mainly on how much truffles can be harvested in the wild.

    Alternating between the right periods of rain and drought is critical for truffle growth.

    For summer Scorzone, it is ideal to have rainy January and February. March and April drier and moderate rainfall during the truffle fruiting period from June to September.
